Glazed Fruit Cocktail Cake Recipe
- 1 1/2 c. flour
- 2 Large eggs
- 1 1/2 c. sugar
- 2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 can (#2) fruit cocktail
- Make a well in dry ingredients and add in Large eggs and fruit.
- Stir gently.
- Pour into greased and floured 9 x 13 inch pan.
- Sprinkle over top, 1/2 c. each, brown sugar and nuts.
- Bake for 55 min at 350 degrees.
- Icing: Boil first 3 ingredients for 3 min.
- Then add in vanilla and coconut.
- Pour boiling warm mix over warm cake, cold and serve.
