Mace'S Meat Loaf
- 1 lb. ground Italian sausage (mild)
- 2 lb. ground beef
- 4 eggs
- 1 onion, finely chopped
- 1 Tbsp. minced garlic
- 3 c. sourdough bread crumbs
- 1/2 c. chopped parsley
- 1/2 c. red wine
- 3/4 Tbsp. dried basil
- 1/2 Tbsp. dried thyme
- 1/2 Tbsp. dried oregano
- 1 tsp. salt
- 1 bunch fresh basil leaves
- 4 oz. sundried tomatoes
- 4 oz. Jack cheese, sliced
- In a large bowl, mix together sausage, ground beef, eggs, onion, garlic, bread crumbs, parsley, wine, basil, thyme, oregano and salt.
- Put mixture on a piece of parchment paper, pressing out to about 3/4-inch thick, forming a rectangle.
- Layer on basil leaves, sundried tomatoes and cheese. Roll meat loaf, jelly roll fashion.
