Shrimp Over Noodles
- 1 lb. unpeeled medium-size fresh shrimp
- vegetable cooking spray
- 1 c. sliced green onions
- 1/2 c. chopped celery
- 1/2 c. sliced fresh mushrooms
- 4 cloves garlic, minced
- 1 (10 3/4 oz.) can cream of mushroom soup, undiluted
- 1/4 tsp. Creole seasoning
- 1 (8 oz.) carton plain yogurt
- hot cooked noodles
- Peel and devine shrimp; set aside.
- Coat a large nonstick skillet with cooking spray.
- Place over medium heat until hot. Add green onions and next 3 ingredients.
- Saute until vegetables are tender.
- Add shrimp.
- Cook 5 minutes, stirring constantly. Stir in soup and seasoning; bring to a boil.
- Remove from heat; stir in yogurt (at room temperature) and serve immediately over hot noodles.
- Yield:
- 4 servings.
