Mint Chocolate Cookies

  1. Simmer water, melt chocolate.
  2. When chocolate is a liquid beat in oil, sugar and mint extract.
  3. Add eggs, one at a time.
  4. Beat until thick and smooth.
  5. Sift flour, baking powder, and salt into chocolate mixture.
  6. Stir until blended.
  7. Cover dough.
  8. Chill at least 4 hours or as long as 2 days.
  9. Roll about 1 tsp cookie dough at a time into a ball.
  10. Roll in powdered sugar to coat generously.
  11. Set balls, slightly apart, on greased baking sheets.
  12. Bake 350 degrees for 10 to 12 minutes.
  13. Let cool on pan about 30 seconds before transferring to a rack to cool completely.
