Ultimate Breakfast pancake Pie

  1. preheat oven to 450
  2. for the pancake pie:
  3. sift flour into a bowl.
  4. add rest of pie crust ingredients.
  5. best until smooth.
  6. batter will be runny.
  7. don't worry.
  8. spray 9 inch pie pan heavily with baking spray.
  9. pour pancake mix into said pie pan.
  10. bake for 20 minutes on middle oven rack.
  11. until browned and fluffy.
  12. remove from oven.
  13. there will be air bubbles.
  14. it will deflate.
  15. let rest for a minute.
  16. using a fork pop remaining air bubbles and press down to flatten.
  17. filling:
  18. drain can of fruit cocktail ot whatever fruit you use.. well and reserve liquid for later.
  19. pour fruit into pancake pie.
  20. sprinkle with coconut.
  21. syrup topping:
  22. mix the reserved juice from can with the rum and the pancake syrup.
  23. whisk until well blended.
  24. just before serving slice like you would a pie..
  25. pour syrup on top and serve.
  26. you may use any canned drogue you like.
  27. hours best with pineapple or peaches.
  28. you may Just use regular syrup instead of the one here.
  29. hints and tips:
  30. to make you're pancake pie a dessert just omit the syrup and top with a dab of ice cream and allot if cool whip!
