Ultimate Breakfast pancake Pie
- 1/2 cup bread flour
- 3 eggs, room temp
- 1 tsp Malibu rum
- 1/2 cup milk, room temp
- 1 handful of coconut
- 15 oz can pineaple chunked,.i used fruit cocktail cuz that's what I had.
- 1 juice from fruit cocktail
- 1/4 tsp Malibu rum
- 1/2 cup pancake syrup
- preheat oven to 450
- for the pancake pie:
- sift flour into a bowl.
- add rest of pie crust ingredients.
- best until smooth.
- batter will be runny.
- don't worry.
- spray 9 inch pie pan heavily with baking spray.
- pour pancake mix into said pie pan.
- bake for 20 minutes on middle oven rack.
- until browned and fluffy.
- remove from oven.
- there will be air bubbles.
- it will deflate.
- let rest for a minute.
- using a fork pop remaining air bubbles and press down to flatten.
- filling:
- drain can of fruit cocktail ot whatever fruit you use.. well and reserve liquid for later.
- pour fruit into pancake pie.
- sprinkle with coconut.
- syrup topping:
- mix the reserved juice from can with the rum and the pancake syrup.
- whisk until well blended.
- just before serving slice like you would a pie..
- pour syrup on top and serve.
- you may use any canned drogue you like.
- hours best with pineapple or peaches.
- you may Just use regular syrup instead of the one here.
- hints and tips:
- to make you're pancake pie a dessert just omit the syrup and top with a dab of ice cream and allot if cool whip!
