Potato Pan Rolls

  1. In mixing bowl, combine 2 c. flour, sugar, yeast and salt.
  2. In a saucepan heat water and butter to 120 - 130 degrees.
  3. Add to dry ingredients.
  4. Beat until smooth.
  5. Stir in mashed potatoes and enough remaining flour to form a soft dough.
  6. Turn onto a floured surface.
  7. Knead until smooth and elastic, about 6 to 8 minutes. Divide into 16 pieces.
  8. Shape each into a ball, place in two greased 8 or 9 inch round baking pans.
  9. Cover and let rise in a warm place until doubled, about 30 minutes.
  10. Sprinkle with additional flour.
  11. Bake at 400u0b0 for 18 - 22 minutes or until golden brown.
  12. Remove from pans to wire racks to cool.
