Easy Chili Sauce
- 25 large, ripe tomatoes
- 4 red peppers, seeded and chopped
- 4 green peppers, seeded and chopped
- 1 1/2 c. dark brown sugar
- 1 Tbsp. ground cloves
- 1 Tbsp. ground ginger
- 1 Tbsp. ground cinnamon
- 1 tsp. cayenne pepper
- 12 onions, sliced
- 4 yellow peppers, seeded and chopped
- 4 c. white vinegar
- 1 Tbsp. celery seed
- 3 Tbsp. salt
- 1 Tbsp. mustard seed
- 1 tsp. garlic powder
- Scald, peel, core and crush tomatoes.
- Add all ingredients together in a large, heavy pot.
- Bring to a boil.
- Reduce heat and simmer for 1 1/2 hours.
- Spoon into hot, sterile jars and seal/process according to manufacturer's directions or with wax. Makes about 12 quarts.
