Cumin Spiced Potatoes
- 3 lb red potatoes; quartered
- 3/4 cup salsa verde
- 1 tbsp roasted & ground cumin
- 1 tbsp paprika
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 2 tsp cumin seed
- 2 tsp Mexican oregano; dried
- 2 tsp ancho chile powder
- 1 tsp cayenne pepper
- 1 salt and pepper
- 1 vegetable oil; as needed
- Marinate potatoes in salsa for 4-48 hours.
- Drain.
- Pat dry.
- Toss with enough oil to cover.
- Season.
- Roast at 375 for approximately 40-45 minutes or until potatoes are caramelized and fork tender.
- Shake pan a few times while cooking to toss around potatoes for even cooking and caramelization.
