Microwave Turkey-Stuffed Peppers

  1. Stand peppers in a 9-inch microwave-safe pie dish.
  2. Add 2 tablespoons water to dish.
  3. Cover with waxed paper.
  4. Microwave on High 6 to 8 minutes until crisp-tender.
  5. Meanwhile, put turkey, salsa, tomato sauce, rice, chili powder, cumin and garlic in a large bowl.
  6. Mix until blended.
  7. Fill peppers with turkey mixture. Cover with waxed paper and microwave on High 16 to 18 minutes, rotating dish 1/4 turn every 4 minutes, until thermometer inserted in center of turkey mixture registers 160u0b0 and peppers are tender. Remove peppers from oven and let stand 5 minutes to finish cooking.
