Microwave Turkey-Stuffed Peppers
- 4 bell peppers (tops sliced off), cored and seeded (trim bottoms so they stand straight)
- 12 oz. ground turkey meat
- 1 c. bottled salsa
- 1 (8 oz.) can tomato sauce
- 3/4 c. uncooked 10 minute brown rice
- 2 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/4 tsp. minced garlic
- Stand peppers in a 9-inch microwave-safe pie dish.
- Add 2 tablespoons water to dish.
- Cover with waxed paper.
- Microwave on High 6 to 8 minutes until crisp-tender.
- Meanwhile, put turkey, salsa, tomato sauce, rice, chili powder, cumin and garlic in a large bowl.
- Mix until blended.
- Fill peppers with turkey mixture. Cover with waxed paper and microwave on High 16 to 18 minutes, rotating dish 1/4 turn every 4 minutes, until thermometer inserted in center of turkey mixture registers 160u0b0 and peppers are tender. Remove peppers from oven and let stand 5 minutes to finish cooking.
