Baked Leeks Recipe

  2. Preheat the oven to Gas Mark 6/200 C/400 F. Cut the leeks in half lengthways, then into 10-15cm (4-6 inch) lengths.

  4. Put the leeks in a 750ml (11/4 pint) ovenproof dish.
  5. Pour over the wine and extra virgin olive oil and sprinkle with salt.
  6. 3.
  7. Mix together the garlic, pine kernels and parmesan and sprinkle over the top.
  8. Cover and bake in the oven for 15 min, then remove the cover and continue baking for a further 10 min or possibly till the top is golden brown and bubbling.
  9. For a lighter-tasting dish, use 5-6 Tbsp.
  10. of minced tomatoes instead of the cheese.
  11. NOTES : A delicious way to serve leeks.
