Baked Leeks Recipe
- 500 gm Leeks, (1lb)
- 150 ml White wine, (1/4 pint)
- 2 Tbsp. Extra virgin olive oil
- 1 x Garlic clove, minced finely
- 25 gm Pine kernels, minced finely (1oz)
- 50 gm Parmesan cheese, grated (2oz) Salt

- Preheat the oven to Gas Mark 6/200 C/400 F. Cut the leeks in half lengthways, then into 10-15cm (4-6 inch) lengths.
- 2.
- Put the leeks in a 750ml (11/4 pint) ovenproof dish.
- Pour over the wine and extra virgin olive oil and sprinkle with salt.
- 3.
- Mix together the garlic, pine kernels and parmesan and sprinkle over the top.
- Cover and bake in the oven for 15 min, then remove the cover and continue baking for a further 10 min or possibly till the top is golden brown and bubbling.
- For a lighter-tasting dish, use 5-6 Tbsp.
- of minced tomatoes instead of the cheese.
- NOTES : A delicious way to serve leeks.
