Cheesy Double-Smoke BBQ Stuffed Meatloaf

  1. Heat oven to 375 degrees F.
  2. Mix ground beef, cracker crumbs, eggs, onions, garlic, pepper and 1/4 cup barbecue sauce just until blended.
  3. Place meat mixture into 11x8-1/2-inch rectangle on sheet of waxed pepper; top with cheese, ham and bacon, spreading ingredients to within 1-1/2 inches of edges.
  4. Roll up tightly, starting at one short side and pulling away waxed paper as meat is rolled.
  5. Place, seam side down, on foil-covered rimmed baking sheet.
  6. Bake 48 to 50 min.
  7. or until done (160 degrees F), brushing with remaining barbecue sauce after 40 min.
  8. Remove from oven.
  9. Let stand 5 min.
  10. before slicing to serve.
