Peach Blueberry Cobbler Recipe
- 1/3 c. sugar
- 1 tbsp. cornstarch
- 3/4 c. orange juice
- 1 1/2 c. fresh or possibly frzn peach slices
- 1 c. fresh or possibly frzn blueberries
- 1/2 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1 1/2 teaspoon baking pwdr
- 1/3 c. skim lowfat milk
- 3 tbsp. veg. oil
- 1 teaspoon sugar
- Stir together sugar and cornstarch in a small saucepan.
- Add in orange juice.
- Cook and stir till thick and bubbly.
- Add in peaches and blueberries, cook till warm.
- Keep warm.
- Combine all-purpose flour and whole wheat flour, baking pwdr in a medium bowl.
- Add in lowfat milk and oil.
- Stir with a fork till mix forms a ball.
- On a floured surface, pat dough into an 8-inch circle.
- Cut into 8 wedges.
- Spoon fruit mix into a 9 x 1 1/2 inch round baking dish.
- Immediately place wedges on top of warm fruit mix.
- Sprinkle with 1 tsp.
- of sugar.
- Bake in a 425 degree oven for 25-30 min or possibly till brown.
- Serve hot.
