Peach Blueberry Cobbler Recipe

  1. Stir together sugar and cornstarch in a small saucepan.
  2. Add in orange juice.
  3. Cook and stir till thick and bubbly.
  4. Add in peaches and blueberries, cook till warm.
  5. Keep warm.
  6. Combine all-purpose flour and whole wheat flour, baking pwdr in a medium bowl.
  7. Add in lowfat milk and oil.
  8. Stir with a fork till mix forms a ball.
  9. On a floured surface, pat dough into an 8-inch circle.
  10. Cut into 8 wedges.
  11. Spoon fruit mix into a 9 x 1 1/2 inch round baking dish.
  12. Immediately place wedges on top of warm fruit mix.
  13. Sprinkle with 1 tsp.
  14. of sugar.
  15. Bake in a 425 degree oven for 25-30 min or possibly till brown.
  16. Serve hot.
