Home Style Baked Beans

  1. Place 1 pound of beans in a large bowl and cover well with water to which 1/2 teaspoon of baking soda has been added.
  2. Let it stand overnight.
  3. Next day, drain and add fresh water to cover. Cook gently in covered pan until tender, about 1 hour (depending on quality of beans).
  4. When done, drain off excess water, but do not leave beans to dry (leaving about 1/2 cup of the liquid).
  5. Add 1 cup of the catsup to the beans, 4 slices of bacon, salt and pepper. Make a paste with the cornstarch, syrup, 1/4 cup catsup and molasses.
  6. Add all to the beans.
  7. Pour into a well-greased baking dish.
  8. Arrange 6 half slices of bacon over top.
  9. Bake, covered, in a 275u0b0 for about 3 hours, removing cover towards end.
  10. If they boil over while baking, keep cover slightly ajar.
