Caramel-Pumpkin Halwa

  1. Cook caramels and 2 Tbsp.
  2. ricotta in large nonstick skillet on medium-high heat 3 to 5 min.
  3. or until caramels are completely melted and mixture is well blended, stirring constantly.
  4. Add remaining ricotta and pumpkin; cook 20 to 25 min.
  5. or until mixture is thickened and starts to pull away from side of skillet, stirring constantly.
  6. Stir in cardamom.
  7. Spread caramel-pumpkin mixture onto bottom of 8-inch square dish sprayed with cooking spray.
  8. Refrigerate 1 hour or until firm.
  9. Cut into squares.
  10. Serve topped with Cool Whip.
