Finnish Nisu
- 2 c. milk, scalded
- 2 pkg. dry active yeast
- 1/2 c. warm water
- 1 tsp. sugar
- 3/4 c. sugar
- 1 tsp. salt
- 4 eggs (at room temperature)
- 1/2 c. margarine
- 7 to 8 c. flour
- 1/2 tsp. ground cardamon
- Scald milk; add margarine, 3/4 cup sugar and salt.
- Cool to lukewarm.
- In a large bowl, dissolve yeast and 1 teaspoon sugar to warm water.
- Allow to set for 5 minutes or until foamy.
- Beat eggs; add eggs and lukewarm milk mixture to yeast.
- Blend well. Add 2 cups flour and ground cardamon; beat well.
- Gradually add remaining flour until dough is easy to handle.
- Knead on a floured surface until smooth and satiny.
- Place dough in a greased bowl, turning to grease top.
- Cover; let rise free from draft until doubled, about 1 hour.
