Blueberry Muffins

  1. Heat oven to 400F.
  2. Combine safflower oil, brown sugar, flour, baking powder, baking soda and salt.
  3. Add buttermilk, egg, oat bran, oatmeal and wheat germ.
  4. Mix lightly with a wooden spoon to moisten.
  5. Stir in blueberries.
  6. Fill paper-lined tins 3/4 full with batter.
  7. Bake at 400F for 20 minutes, or until toothpick inserted into center comes out dry.
  8. Remove muffins from tins& cool on wire racks.
