Blueberry Muffins
- 14 cup safflower oil
- 34 cup brown sugar
- 1 cup unbleached flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 14 teaspoon salt
- 1 cup low-fat buttermilk
- 1 egg
- 13 cup oat bran
- 13 cup oatmeal
- 13 cup wheat germ
- 1 13 cups blueberries
- Heat oven to 400F.
- Combine safflower oil, brown sugar, flour, baking powder, baking soda and salt.
- Add buttermilk, egg, oat bran, oatmeal and wheat germ.
- Mix lightly with a wooden spoon to moisten.
- Stir in blueberries.
- Fill paper-lined tins 3/4 full with batter.
- Bake at 400F for 20 minutes, or until toothpick inserted into center comes out dry.
- Remove muffins from tins& cool on wire racks.
