Swiss Steak(Serves 6)
- 2 lb. round steak, fairly thick
- 1 c. flour
- 1 tsp. salt
- 1/2 tsp. paprika
- 2 onions, sliced
- 1/4 c. oil
- 1 green pepper, diced
- 1 c. chopped celery
- 1 bay leaf
- 1 large can tomatoes
- 1 Tbsp. Worcestershire sauce
- Mix flour, salt and paprika.
- Cut steak in pieces.
- Dredge in flour mix and fry in hot oil until golden.
- Remove pieces as they brown to a Dutch oven.
- When meat is all fried, stir remaining flour mix into the oil in pan.
- Stir to blend.
- Add tomatoes and stir.
- If too thick, add beef consomme.
- Sprinkle onions, celery and pepper over meat pieces in pan.
- Add the bay leaf.
- Add the Worcestershire sauce to the tomato mixture.
- Pour over steak in pan.
- Cover.
- Bake in a 350u0b0 to 375u0b0 oven for 2 hours.
