Pumpkin Bars(Diabetic)

  1. Preheat oven to 325u0b0.
  2. With electric mixer, combine margarine, apple juice concentrate, fructose and mashed banana.
  3. Beat in egg, pumpkin and vanilla.
  4. Stir flour, cinnamon, ginger, allspice and baking soda in a medium bowl until blended.
  5. Stir dry ingredients into pumpkin mixture.
  6. Add raisins and nuts.
  7. Spread into 9 x 13-inch pan which has been sprayed with nonstick vegetable coating. Bake for 25 minutes or until firm in center.
