Creamy Mediterranean Ratatouille Pasta Salad
- 2/3 cup KRAFT MAYO Real Mayonnaise
- 6 Tbsp. KRAFT Sun Dried Tomato Vinaigrette with Extra Virgin Olive Oil
- to taste salt and black pepper
- 1/2 tsp. crushed red pepper
- 2 qt. whole wheat medium pasta shell, cooked
- 2 cups grape tomatoes, halved
- 1 cup eggplants, grilled, chopped Safeway 1 ea For $1.28 thru 02/09
- 1 cup yellow squash, small dice
- 1 cup zucchini, small dice
- 1 cup canned artichoke hearts, well drained, quartered
- 1 cup Asiago cheese, shredded
- 1 cup fresh basil, chiffonade
- 1/2 cup oil-packed sun-dried tomatoes, drained, diced
- 1/2 cup roasted red peppers, julienned
- Mix mayonnaise, vinaigrette and seasonings in large bowl.
- Add remaining ingredients; mix lightly.
