Ajlouke Quraa

  1. Trim the ends of the zucchini and cut into large pieces.
  2. Boil in water for 10 to 15 minutes, until very soft.
  3. Drain, then chop and mash in the colander to get rid of excess water.
  4. Beat the rest of the ingredients together and mix into the zucchini.
  5. Serve cold.
  6. Garnish with 4 ounces feta cheese, crumbled with a fork, and a few green and black olives.
