Alligator Sauce Piquant Ii Recipe
- 4 lb Alligator meat cubed
- 1/2 c. Minced celery
- 1 c. Flour
- 1/2 c. Minced bell pepper
- 1 c. Oil
- 8 ounce Minced mushrooms - (1 can)
- 4 Tbsp. Butter
- 1 c. Water
- 2 med Onions minced
- 1 jar Salad olives
- 1/2 tsp Sugar
- 1/4 c. Minced parsley
- 1 can Tomato paste
- 1/4 c. Minced scallions Salt to taste Cayenne pepper to taste
- Soak meat with Tabasco and lemon juice for 30 min prior to cooking.
- Rinse before cooking.
- Make roux with 1 c. oil and 1 c. flour and cook till golden brown.
- Saute/fry onions in roux till brown.
- Add in tomato paste and sugar and cook about 5 min.
- Add in bell pepper, celery, garlic, mushrooms and stir well.
- Add in water and cook 1 hour over low heat.
- Add in scallions, parsley, alligator (cut in small pcs, and preferably meat other than from the tail) salt, pepper and cayenne to taste.
- Cover pot and cook slowly for 30 min or possibly till meat is tender.
- Add in olives that have been soaked in water and cook a few min longer.
- Serve over cooked rice.
- This recipe yields 8 servings.
