Steph'S Chicken Soup

  1. Boil thighs with 1 teaspoon salt and bay leaf in soup pot until done.
  2. Debone and chop chicken and add back to soup pot.
  3. Add 3 or 4 drumstick bones back to soup pot (adds flavor).
  4. Add brown rice and simmer 30 minutes.
  5. Add celery, carrots, green beans and stewed tomatoes.
  6. Simmer 15 minutes more.
  7. Add seasonings; stir.
  8. Remove from heat and let sit 10 minutes.
  9. Stir and serve.
  10. Fabulous on a cold winter day with a fresh loaf of bread!
