Steph'S Chicken Soup
- 6 chicken thighs
- 3 stalks celery, chopped
- 2 c. brown rice
- 4 to 6 Tbsp. soy sauce
- 3 carrots
- 1 can stewed tomatoes
- 1 c. green beans
- 2 chicken bouillon cubes
- 1 tsp. cayenne
- 1 bay leaf
- 3 tsp. Mrs. Dash lemon herb
- Boil thighs with 1 teaspoon salt and bay leaf in soup pot until done.
- Debone and chop chicken and add back to soup pot.
- Add 3 or 4 drumstick bones back to soup pot (adds flavor).
- Add brown rice and simmer 30 minutes.
- Add celery, carrots, green beans and stewed tomatoes.
- Simmer 15 minutes more.
- Add seasonings; stir.
- Remove from heat and let sit 10 minutes.
- Stir and serve.
- Fabulous on a cold winter day with a fresh loaf of bread!
