Company Coleslaw
- 1 small cabbage (about 1 3/4 lb.), coarsely chopped
- 1 (20 oz.) can unsweetened crushed pineapple (undrained)
- 2 medium apples, diced
- 1 1/2 c. grated carrot
- 1 c. chopped celery
- 1/4 c. raisins
- 1/4 c. reduced-calorie mayonnaise
- 1 c. self-rising corn meal
- 2 eggs
- 8 oz. sour cream
- 1 Tbsp. sugar (optional)
- 1 c. fresh tomatoes, chopped and drained
- 1 c. onion (medium), chopped
- 1 c. green sweet bell pepper (for color, add a little yellow and red bell pepper)
- 1 c. sweet pickle relish
- 1 c. shredded sharp Cheddar cheese
- 1 c. mayonnaise (Duke's preferably)
- 1 tsp. sugar (optional)
- Mix cornbread with remaining ingredients. Chill at least 2 hours before serving.
