Cold Sesame Noodles *
- 2 Tbsp. peanut butter
- 2 1/2 Tbsp. sesame oil
- 1 1/2 Tbsp. soy sauce
- 1/4 c. water
- 2 tsp. minced garlic
- 2 tsp. minced ginger root
- 2 tsp. rice vinegar
- 1 tsp. sugar
- pinch of salt
- 1/4 tsp. Asian chili paste or hot pepper flakes
- 3/4 lb. fresh egg noodles or spaghetti
- 3 Tbsp. minced scallions
- In blender, blend first ten ingredients, reserving 1/2 tablespoon sesame oil.
- In kettle of boiling, salted water, cook noodles until al dente; drain and rinse in cold water.
- Drain again well and toss in bowl with remaining sesame oil.
- Mound noodles on platter; drizzle with sesame mixture and sprinkle with scallions.
- Adjust seasonings to taste.
- Serves four as main course.
