Presto Praline Cookies

  1. Preheat the oven to 350F (180C).
  2. In a heavy 2-quart or larger saucepan, combine the butter, margarine and brown sugar; cook over low heat, uncovered, stirring from time to time.
  3. Meanwhile, coat the bottom and sides of a 15x10 inch jelly roll pan with cooking spray.
  4. Line the pan with graham crackers.
  5. When the butter and margarine melt, raise the heat to medium and bring the mixture to a boil.
  6. Boil 1 minute, stirring constantly.
  7. Reduce the heat to low and continue to boil, stirring constantly, for 1 more minute or until the butter and sugar are well-combined.
  8. Remove from heat; stir until the mixture stops bubbling.
  9. Stir in pecans.
  10. Spoon the mixture over the crackers.
  11. Bake uncovered for 8 minutes.
  12. Remove from the oven, and using a spatula, carefully transfer the cookies to a wire rack.
  13. Cut or break the pieces in half while still warm.
  14. Let cool 15 minutes (or up to 8 hours) and serve.
