Basil And Broccoli Chicken

  1. Sprinkle chicken with salt and pepper.
  2. Brown in margarine; cook until tender.
  3. Remove chicken.
  4. Add rice to drippings; saute until rice is golden brown.
  5. Stir in 2 1/2 cups of water, contents of seasoning packet and basil.
  6. Place chicken over rice mixture; bring to a boil over high heat.
  7. Cover, reduce heat and simmer 15 minutes.
  8. Top with broccoli and tomatoes.
  9. Cover; continue to simmer 5 minutes or until liquid is absorbed and chicken is well cooked.
  10. Sprinkle with cheese.
  11. Cover; let stand a few minutes before serving.
