Basil And Broccoli Chicken
- 4 chicken breasts, boned and skinned
- salt and pepper to taste
- 2 Tbsp. margarine
- 1 (6.9 oz.) pkg. Rice-A-Roni (chicken flavor)
- 1 tsp. dried basil
- 2 c. broccoli flowerets
- 1 medium tomato, chopped
- 1 c. (4 oz.) shredded Mozzarella cheese
- Sprinkle chicken with salt and pepper.
- Brown in margarine; cook until tender.
- Remove chicken.
- Add rice to drippings; saute until rice is golden brown.
- Stir in 2 1/2 cups of water, contents of seasoning packet and basil.
- Place chicken over rice mixture; bring to a boil over high heat.
- Cover, reduce heat and simmer 15 minutes.
- Top with broccoli and tomatoes.
- Cover; continue to simmer 5 minutes or until liquid is absorbed and chicken is well cooked.
- Sprinkle with cheese.
- Cover; let stand a few minutes before serving.
