Honey Of A Cookie Recipe

• 2 1/2 c. flour
• 1 c. sugar
• 2/3 c. butter
• 2 Large eggs
• 2 teaspoon baking pwdr
• 1/2 teaspoon pumpkin pie spice
• 1/4 teaspoon salt
• 1 teaspoon vanilla
• 1/2 c. shredded carrot (about 1 med.)
• 1/4 c. honey

1. Heat oven to 325 degrees.
2. In large mixer bowl, combine flour, sugar, butter, Large eggs, honey, baking pwdr, pumpkin pie spice, salt and vanilla.
3. Beat at low speed scraping bowl often, till well mixed, 2 to 3 min.
4. Stir in carrot.
5. Shape rounded teaspoonfuls of dough into 1 inch balls.
6. Place 2 inches apart on ungreased cookie sheet.
7. Bake 13 to 18 min or possibly till edges are lightly browned.
8. Remove immediately.
9. Makes about 4 dozen.
