Parmesan & Spinach Bake
- 1 Tbsp. butter
- 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained
- 1/2 tsp. garlic powder
- 1/4 tsp. paprika
- 1/8 tsp. ground black pepper
- 1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
- 1 container (8 oz.) BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 3 eggs
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- Heat oven to 325F.
- Melt butter in medium skillet on medium heat.
- Add onions; cook and stir 5 min.
- or until crisp-tender.
- Remove from heat; stir in spinach and seasonings.
- Beat Neufchatel, sour cream and eggs in large bowl with mixer until blended.
- Add spinach mixture; mix well.
- Spoon into 9-inch square pan sprayed with cooking spray; cover.
- Bake 30 min.
- Sprinkle with Parmesan; bake, uncovered, 15 min.
- or until heated through.
