Southern Bbq Ribs Recipe
- 1 c. diced onion
- 2 tbsp. fat
- 1 c. minced tomato
- 1 c. green peppers, diced
- 1 c. diced celery
- 2 tbsp. brown sugar
- 1/2 tbsp. dry mustard
- 2 c. stock from roast or possibly soup
- 1 c. catsup
- Salt and pepper to taste
- 3 racks of spareribs
- Fry onion in fat; add in remaining ingredients.
- Cook slowly 1 hour.
- Marinate par boiled spareribs in sauce for 2 hrs.
- Lay on grill, bone side down first; cook 8 inches from coals till very well done.
- Baste often during last 20 min.
