Mexican Vegetable Soup Recipe
- 1 pound grnd beef
- 1.25 ounce. pkg. taco seasoning mix
- 46 ounce. can tomato juice
- 16 ounce. pkg. frzn mixed vegetables
- 15 ounce. can chili warm beans
- 12 ounce. can tomato paste
- 2 c. crushed corn chips
- 8 ounce. shredded cheddar cheese
- In large pot, brown grnd beef; drain.
- Add in taco seasoning mix, tomato juice, vegetables, chili beans and tomato paste; mix well.
- Bring just to a boil.
- Reduce heat, simmer uncovered for 20 to 25 min, stirring occasionally.
- Serve into bowls and top each with corn chips and cheese.
