Apple Coffee Cake
- 2 1/2 c. peeled, coarsely chopped apples
- 1 1/4 c. white flour
- 3/4 c. whole wheat flour
- 1/2 c. plus 1 Tbsp. brown sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 c. canola oil
- 1/2 c. skim milk
- 2 egg whites
- Toss apples with 1/2 cup of white flour and set aside.
- In mixing bowl, combine white flour (remaining), whole wheat flour, 1/2 cup brown sugar, baking powder, salt and 1/4 teaspoon cinnamon.
- Add oil, milk and egg whites; stir until all ingredients are moistened.
- Stir in apples.
- Pour batter into a 10-inch round baking pan (nonstick).
- Take the remaining brown sugar and cinnamon and sprinkle over coffee.
- Bake at 400u0b0 for 30 minutes or until done.
