Banana Coconut Frosting Recipe

  1. Melt 2 tablespoons butter in a large skillet.
  2. Stir in coconut and pecans.
  3. Cook, stirring constantly, over medium heat until coconut and nuts are golden brown, about 8 minutes.
  4. In a small bowl mash the bananas and lemon juice together.
  5. In a separate bowl cream the remaining butter with an electric mixer on medium speed.
  6. Add the sugar and banana mixture.
  7. Blend well.
  8. Add the toasted coconut-pecan mixture.
  9. Mix well.
