Peg's Crispy Cookies
- 1 cup butter
- 1 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 12 teaspoon cream of tartar
- 12 teaspoon salt
- 2 cups Rice Krispies
- Preheat oven to 350F.
- Cream butter and sugar.
- Beat in egg and vanilla.
- Sift the dry ingredients and beat them into the sugar mixture.
- Blend in rice krispies.
- Shape into small balls (I use a 1-inch ice cream scoop) and press down with a sugar coated fork.
- Bake for approximately 12 minutes or until pale golden.
