Basmati Rice Salad Recipe
- 2 c. Basmati rice rinsed till water runs clear, and liquid removed well
- 3 Tbsp. Vegetable oil
- 1 lrg Onion thinly sliced
- 2 x Garlic cloves minced
- 1 x Cinnamon stick
- 1 x Bay leaf
- 2 whl cloves
- 1 x Cardamom pod
- 1/2 tsp Cumin
- 3 1/2 c. Boiling water
- 1/2 c. Golden brown raisins Salt to taste Freshly-grnd black pepper to taste
- 1/2 c. Cashews
- Heat oil in a medium saucepan over medium-high heat, add in the onions and garlic and cook till soft.
- Add in the cinnamon, bay leaf, cloves, cardamom and cumin and cook for 1 minute.
- Add in the boiling water and raisins and season with salt and pepper to taste.
- Let the water come back to a boil, stir once, cover the pot, reduce the heat and let cook for 12 to 15 min.
- Remove from heat and let sit 10 min.
- Remove lid and fluff with a fork, mix in cashews and reseason with salt and pepper to taste.
- Serve at room temperature.
- This recipe yields 4 servings.
