Basmati Rice Salad Recipe

  1. Heat oil in a medium saucepan over medium-high heat, add in the onions and garlic and cook till soft.
  2. Add in the cinnamon, bay leaf, cloves, cardamom and cumin and cook for 1 minute.
  3. Add in the boiling water and raisins and season with salt and pepper to taste.
  4. Let the water come back to a boil, stir once, cover the pot, reduce the heat and let cook for 12 to 15 min.
  5. Remove from heat and let sit 10 min.
  6. Remove lid and fluff with a fork, mix in cashews and reseason with salt and pepper to taste.
  7. Serve at room temperature.
  8. This recipe yields 4 servings.
