Fake-Fried Chicken and Onion Rings
- 4 chicken breasts
- 2 onions
- 1 (8 ounce) can French's French fried onions
- 1 cup Fiber One cereal
- 1 cup Egg Beaters egg substitute
- 1 tablespoon fajita seasoning mix
- 1 teaspoon garlic powder
- Fill a shallow, flat bowl with the egg beaters.
- Mix the dry spices into the egg mix.
- In a food processor, chop up the french's onions and the fiber one cereal, pour into seperate bowl and put next to the egg bowl.
- Cut all fat off the chicken breasts and skins.
- Cleanse the chicken under tap water.
- Cut the onions up like you are cutting onion rings.
- Dip the chicken and onion rings, one-at-a-time, into the egg mix and then the dry mix, three times each.
- Give time for it to drip before placing in the dry mix, however.
- Place the chickens on the smoker and cook until clear, about 25-30 minutes depending upon heat.
- Place the onions rings on foil OVER fire for 10-15 minutes, or until crunchy.
