Cod Stew With Tomatoes
- 2 lbs cod fish fillets
- 1 (28 ounce) can tomatoes, cut up
- 14 teaspoon marjoram
- 14 teaspoon basil
- 1 teaspoon salt
- 14 teaspoon pepper
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 3 celery ribs, chopped
- 14 cup parsley, chopped
- 4 slices toast
- Pour olive oil into deep pan on medium heat.
- Add garlic & celery.
- Saute briefly.
- Add spices,tomatoes, and parsley.
- Cover and simmer 30 minutes.
- Meanwhile, salt fillets lightly and place in well greased steamer.
- Steam over boiling water 10 minutes.
- Pour sauce over fish.
- Serve over toast points.
