Scallops Au Gratin
- 1 lb. scallops
- 1/4 c. chopped onion
- 3 Tbsp. butter
- 3 Tbsp. flour
- dash of pepper
- 1/2 c. milk
- 3 oz. can mushrooms
- 2 Tbsp. Parmesan cheese
- 1 Tbsp. fine parsley flakes
- 1/2 c. chopped American cheese
- 1 1/2 c. crushed potato chips
- 1 c. reserved liquid
- Parboil scallops 2 minutes; drain, reserving 1 cup of liquid. Put scallops in a greased 2-quart casserole.
- In pot, melt butter and cook onion until tender.
- Add flour, then pepper, milk and liquid.
- Stir until thickens; add mushrooms, Parmesan cheese and parsley flakes.
- Cover scallops with creamed mixture; top with American cheese, then chips.
- Cook, covered, for 20 minutes at 350u0b0.
- Also good made with crabmeat or combination of seafood.
