Chocolate Bread

  1. In a large bowl, mix water, yeast and sugar.
  2. Let stand 5 minutes.
  3. Stir in 3 cups flour (if using cinnamon, sift into flour).
  4. Stir in cocoa, butter, egg and salt.
  5. Beat until dough is very "stretchy" about 10 minutes.
  6. Stir in chocolate chips and raisins, if used.
  7. Sprinkle rest of flour on board and knead dough 5 or 6 times.
  8. Barely incorporate flour and make a smooth round, about 1 minute.
  9. Place dough in greased 10 x 15-inch pan.
  10. Cover with plastic wrap and let rise until puffy, about 1 hour.
  11. Bake 1 hour, uncovered, at 350u0b0.
  12. Sprinkle with powdered sugar when warm. A good way to satisfy that chocolate craving without too many calories!
  13. Per ounce:
  14. 88 calories, 2.1 g. protein, 14 g. carbohydrate, 2.8 g. fat, 9.3 mg. cholesterol, 55 mg. sodium.
