Chocolate Bread
- 1 1/2 c. warm water (110~)
- 1 pkg. dry yeast
- 2 Tbsp. fructose sugar or 4 Tbsp. cane sugar
- 4 c. flour
- 1/3 c. unsweetened cocoa
- 2 Tbsp. butter or margarine
- 1 large egg
- 3/4 tsp. salt
- 1 (6 oz.) pkg. semi-sweet chocolate baking chips
- powdered sugar
- 1/2 c. raisins (optional)
- 2 tsp. cinnamon (optional)
- In a large bowl, mix water, yeast and sugar.
- Let stand 5 minutes.
- Stir in 3 cups flour (if using cinnamon, sift into flour).
- Stir in cocoa, butter, egg and salt.
- Beat until dough is very "stretchy" about 10 minutes.
- Stir in chocolate chips and raisins, if used.
- Sprinkle rest of flour on board and knead dough 5 or 6 times.
- Barely incorporate flour and make a smooth round, about 1 minute.
- Place dough in greased 10 x 15-inch pan.
- Cover with plastic wrap and let rise until puffy, about 1 hour.
- Bake 1 hour, uncovered, at 350u0b0.
- Sprinkle with powdered sugar when warm. A good way to satisfy that chocolate craving without too many calories!
