Roasted Vegetable and Turkey Shepherd's Pie

  1. Heat oven to 400 degrees F. Melt butter in medium saucepan over low heat.
  2. Add flour and cook, stirring, 3 minutes.
  3. Slowly whisk in apple juice and chicken broth.
  4. Simmer, stirring, until thickened, about 3 minutes.
  5. Add salt and pepper and remove from heat.
  6. Add vegetables, turkey, and parsley to sauce.
  7. Transfer to shallow 9" casserole.
  8. Top with mashed potatoes and bake 30 minutes, until golden and heated through.
