Roasted Vegetable and Turkey Shepherd's Pie
- 3 tbsp. butter or margarine
- 3 tbsp. all-purpose flour
- 1 c. apple juice
- 1/2 c. chicken broth
- 1/2 tsp. salt
- 1/4 tsp. Pepper
- 4 c. roasted vegetables (carrots, onions, parsnips)
- 3 c. chopped skinless and boneless roast turkey
- 2 tbsp. Chopped flat-leaf parsley
- 3 c. Mashed potatoes
- Heat oven to 400 degrees F. Melt butter in medium saucepan over low heat.
- Add flour and cook, stirring, 3 minutes.
- Slowly whisk in apple juice and chicken broth.
- Simmer, stirring, until thickened, about 3 minutes.
- Add salt and pepper and remove from heat.
- Add vegetables, turkey, and parsley to sauce.
- Transfer to shallow 9" casserole.
- Top with mashed potatoes and bake 30 minutes, until golden and heated through.
