Black Bean and Mango Salad
- 3 Tbsp. KRAFT Lite House Italian Dressing
- 1/3 cup black beans, cooked or canned without added salt
- 1/3 cup frozen corn
- 1/3 cup cookedinstant brown rice
- 1 fresh mango, chopped Whole Foods 2 ea For $4.00 thru 02/09
- 1/2 medium red pepper, chopped
- 1/8 medium red onion, chopped
- 1 Tbsp. fresh cilantro, chopped
- 1 Tbsp. lime juice
- 1/8 tsp. (just a pinch) ground cumin
- 8 fl oz (1 cup) fat-free milk
- Mix all salad ingredients until well blended; cover.
- Refrigerate at least 2 hours before serving.
- Serve with a glass of milk.
