Jiffy Peach Cobbler
- 3 to 4 c. canned sliced peaches, drained
- 1/2 c. peach juice
- 1/4 lb. oleo
- 1 c. sugar
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 c. milk
- 1 c. flour
- 6 Tbsp. reduced-calorie margarine, softened
- liquid sugar substitute to equal 1 c. sugar
- 1 tsp. baking soda
- 1 c. cold unsweetened applesauce
- 1 egg, beaten
- 2 c. all-purpose flour, sifted
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. cloves
- 6 Tbsp. raisins
- 6 small walnuts, chopped
- Cream margarine with sugar substitute.
- Combine soda and applesauce and add to margarine mixture.
- Add remaining ingredients; stir just until blended.
- (Do not overmix.) Pour into nonstick 7 x 11-inch baking pan.
- Bake at 350u0b0 for 40 to 50 minutes.
- When cake is cool, cut into 15 equal slices.
