Mexican Meat Loaf
- 1 lb. ground beef
- 1 can corn
- 1 can Ranch Style beans
- chili powder to taste
- 1 (10 count) soft flour tortillas
- 1 can Ro-Tel tomatoes
- 1 can cream of chicken soup
- 1 pkg. (24 count) Velveeta slices
- First, brown ground beef, then drain.
- In same skillet, mix in corn and Ranch Style beans, then add chili powder to taste.
- In a 13 x 9-inch pan, layer bottom of pan with tortillas.
- May have to tear in pieces to cover.
- Next, layer half of ground beef mixture, then add layer of cheese to cover completely.
- Next, add layer of tortillas, then ground beef mixture, then cheese, then 1 more layer of tortillas.
- In small bowl, mix the Ro-Tel and the soup together.
- Pour on top and bake in a 400u0b0 oven until bubbly.
