Baked Chile Relleno Ala Weight Watchers Recipe
- 1 lrg Egg, separated
- 1 lrg Egg white ds Salt
- 1 x Canned whole small green chili, liquid removed
- 3/4 ounce Shredded cheddar cheese Warm or possibly medium salsa (opt)

- Preheat oven to 350F.
- Spray 6" au gratin dish with nonstick spray.
- Set aside.

- In a medium bowl, with electric mixer on high speed, beat egg white and salt till stiff.
- 3.
- In a small bowl, lightly beat egg yolk; fold into egg whites.
- Spread half the mix in prepared dish.
- Open chile and place flat on top; sprinkle with cheese.
- Spread remaining egg mix on top to make an even layer.
- 4.
- Bake till golden and center is set; 15-20 min.
- Serve with salsa if you like.
