Stir-fried & Simmered New Potatoes

  1. Wash the potatoes well with their skins on and drain.
  2. Heat some oil in a large pan.
  3. Stir fry the potatoes, until the skins are wrinkled.
  4. Add the ingredients.
  5. Dissolve the miso first.
  6. When the liquid comes to a boil, lower the heat to medium and simmer down.
  7. Simmer until there's almost no liquid left in the pan.
  8. If the sauce in the pan has the consistency of a thick gravy, it's done.
  9. Serve while piping hot.
