Stir-fried & Simmered New Potatoes
- 500 grams New potatoes (small)
- 2 tbsp Vegetable oil
- 800 ml Water
- 3 tbsp Red miso (or awase miso)
- 3 tbsp Raw cane sugar (or caster sugar)
- 1 tbsp Sake
- 1 tsp Dashi stock granules
- Wash the potatoes well with their skins on and drain.
- Heat some oil in a large pan.
- Stir fry the potatoes, until the skins are wrinkled.
- Add the ingredients.
- Dissolve the miso first.
- When the liquid comes to a boil, lower the heat to medium and simmer down.
- Simmer until there's almost no liquid left in the pan.
- If the sauce in the pan has the consistency of a thick gravy, it's done.
- Serve while piping hot.
