Three Alarm Chili
- 2 lb. lean ground beef
- 2 large onions, chopped
- 1 tsp. chopped garlic or 2 to 3 cloves
- 1 pkg. Carroll Shelby's chili mix or store brand equivalent plus 1/2 tsp. cayenne pepper
- 2 (14 oz.) cans Mexican or salsa style stewed tomatoes
- 1 (15 1/2 oz.) can red kidney beans
- 1 (15 1/2 oz.) can white kidney beans
- 1 (15 1/2 oz.) can Great Northern beans
- 1 (3 1/2 oz.) can whole jalapeno peppers
- In a large skillet, brown ground beef and drain.
- Add onion, garlic and chili mix.
- Simmer for 15 minutes.
- Drain beans and discard liquid.
- Drain jalapenos; reserve liquid.
- Remove stems and slice.
- In crock-pot, combine beans, tomatoes, peppers and liquid.
- Add ground beef mixture.
- Add up to 2 cups of water. Cook on high until bubbling.
- Reduce heat.
- Simmer 4 to 5 hours or cook on low overnight.
