Bluenose Strawberry Soup
- 2 cups strawberries sliced
- 2 tablespoons brandy
- 1 cup sour cream
- 1/2 teaspoon vanilla extract
- 1 cup light cream (half&half)
- 1 x strawberries extra,
- 1 x mint sprigs
- 1/4 cup sugar
- Blend strawberries, sour cream, half and half, sugar, brandy and vanilla until smooth, about 30 to 45 seconds.
- Serve in chilled cup and garnish with sliced strawberries and mint sprigs.
