Marni'S Chicken And Vegetable Couscous
- 2 medium onions, thinly sliced
- 2 large garlic cloves, minced
- 2 Tbsp. olive oil
- 1 whole chicken, skinned and cut up into small pieces
- 1 (16 oz.) can tomatoes and juice, cut up
- 1 zucchini, cut into 1/3-inch thick rounds
- 3 carrots, cut into 1-inch pieces
- 10 Brussels sprouts, whole or cut in half
- 3 green onions
- 1/2 to 1 c. chicken broth
- 1/2 c. raisins
- 1/4 c. vermouth
- 2 Tbsp. curry powder
- 3/4 tsp. cinnamon
- 2 tsp. honey
- dash of cayenne pepper
- fresh green herbs, parsley, basil and salt and pepper to taste
- couscous
- In a large saute pan, saute the onions and garlic in olive oil until brown.
- Remove onion mixture temporarily, then saute the chicken until brown.
- Return onions to pan.
- Add tomatoes, curry powder, cayenne, cinnamon, honey, vermouth and broth.
