Turkey Patties Dijon
- 1 14 lbs ground turkey
- 1 cup fresh breadcrumb
- 1 egg
- 14 cup finely chopped scallion
- 1 12 tablespoons Dijon mustard
- 12 teaspoon dried tarragon
- 2 tablespoons butter
- 12 cup dry white wine
- In a large bowl, combine turkey, bread crumbs, egg, scallions, mustard and tarragon.
- Shape into 4 patties, 1/2 inch thick.
- In a large skillet, melt butter over medium low heat.
- Add patties and cook, turning once, until golden brown outside and white but still moist inside, about 10 minutes total.
- Remove to plate, leaving drippings in pan.
- Add wine to skillet, raise heat to high, and boil, stirring up browned bits, until slightly reduced, 1-2 minutes.
- Pour sauce over patties and serve.
