Oysters In Patty Shells
- 1 pt. fresh standard oysters (undrained)
- 2 Tbsp. butter or margarine
- 1 medium onion, finely chopped
- 1 Tbsp. all-purpose flour
- 1 (4 oz.) can mushroom stems and pieces, drained
- 2 Tbsp. chopped parsley
- 1/4 tsp. lemon juice
- 1/2 tsp. salt
- 1/8 tsp. pepper
- dash of red pepper
- 6 commercial patty shells, baked
- Place oysters in a saucepan; cook over medium heat 8 to 10 minutes or until edges of oysters begin to curl.
- Drain.
- Melt butter in a large skillet; add onion and saute until tender.
- Add flour, stirring until blended.
- Stir in next 6 ingredients and oysters.
- Simmer, uncovered, 15 minutes, stirring frequently. Spoon oyster mixture into patty shells, and place on a lightly greased baking sheet.
- Bake at 375u0b0 for 5 minutes or until thoroughly heated.
- Yields 6 servings.
