Lemon Snack Cake

  1. Heat oven to 350F.
  2. Lightly grease 8-inch square baking pan; set aside.
  3. Combine flour, sugar, baking powder and salt in prepared pan.
  4. Make 2 indentations in flour mixture.
  5. Set aside.
  6. Combine egg and lemon zest in bowl with fork; pour into 1 indentation.
  7. Pour 1/4 cup melted margarine in other indentation.
  8. Pour milk over all; mix well.
  9. (Some lumps will remain.)
  10. Bake 30-35 minutes or until toothpick inserted in center comes out clean.
  11. Cool completely.
  12. Combine powdered sugar, 1 tablespoon melted margarine and enough lemon juice for desired glazing consistency in small bowl.
  13. Spread glaze over cooled cake.
  14. Top each serving with lemon zest, if desired.
  15. *Substitute melted Land O Lakes Butter.
